How to make zucchini skewers

Clean the courgettes and cut them lengthwise into thin slices.

Chop the parsley and capers and add it with the breadcrumbs, salt and chives.
Mix the ingredients and use them to cover the slices of zucchini.

Now cut the smoked cheese into pieces and add some on the various slices.
Then roll up one courgette at a time.

Stick the courgettes gradually into the wooden stick.

Hello everyone, in this period my garden delights me with many courgettes that I cook in a thousand ways, today I propose them in a skewer version.
Just get a courgette with a minimum diameter of 4 cm, cut it with a potato peeler or a mandolin into thin slices, stuff it with cooked ham and scamorza cheese, roll it in flavored breadcrumbs. An infinite goodness, my boys brushed them all in an instant.

Ingredients for 5 skewers with 4 courgette rolls

  1. I chop the parsley and basil, put them in breadcrumbs with a finely chopped clove of garlic, add salt and pepper and mix well
  2. I wash the courgette, remove the ends and cut it into thin slices with a potato peeler or a mandolin. I cut the cooked ham into wide strips like courgette, cut the scamorza cheese into cubes
  3. slowly the courgette slice on the cutting board, I put the cooked ham along its entire length, the smoked cheese in one end and roll it all up. While the smaller slices overlap them, stuffing them in the same way and rolling them up
  4. I roll the prepared rolls in flavored breadcrumbs, then I stick them on a skewer, I put 4 on each skewer. If you want, you can arrange them in a baking dish, without sticking them on the skewer

BAKED ZUCCHINI ROLLS

Wash the courgette and remove the two ends. Then, with the help of a mandolin or a potato peeler, cut it into very fine slices.

Arrange the baked Zucchini rolls on a baking tray and sprinkle the surface with a sprinkling of breadcrumbs and a drizzle of olive oil. Bake the courgette rolls in the oven for about 15 minutes at 190 ° -200 °.

Vegetarian skewers

Skewers are always a welcome dish during summer barbecues, because they combine taste, lightness and speed of preparation. This time, instead of the usual meat-based ones, I propose a totally vegetarian version a little different from the usual, just as tasty and that will save you from having to think of an alternative for those who don't eat meat.

Carefully clean and wash 2 courgettes, 2 Tropea onions, half a red pepper, half a yellow pepper, half a green pepper, 10 cherry tomatoes and 20 small champignon mushrooms. Remove the stems of the mushrooms and cut the courgettes into slices and the onions and peppers into small pieces. Instead, leave the tomatoes whole.

In a bowl, prepare an emulsion of olive oil, vinegar, salt, pepper and thyme, to which you will add 2 peeled and crushed cloves of garlic. Put the vegetables and mushrooms in the bowl and cook them for 15-20 minutes, then keep the marinade.

Prepare the grill (or plate) and while it heats up, put the vegetables and mushrooms on the classic wooden skewers, alternating them. When the grill (or plate) is hot, cook your skewers by turning them on all sides and brushing them, during cooking, with the marinade you have kept aside. When they are well cooked and charred (depending on your taste), serve them immediately, along with a nice iced drink. Success guaranteed!

Of course mine is just a suggestion and you can compose your skewers by choosing the vegetables you prefer.


Gratinated courgette skewers

  • 2 courgettes
  • three packs of crackers
  • 2 cloves of garlic
  • a handful of pine nuts
  • parsley
  • half a tablespoon of turmeric, if you like or as a substitute for curry will be fine
  • extra virgin olive oil and salt to taste

Preparation
