A pound cake is simply a type of American sponge cake, always very simply flavoured and nice on its own with a cuppa.

  • 450g butter, at room temperature
  • 120ml milk
  • 1 teaspoon vanilla extract
  • 500g plain flour

  1. Separate the eggs. Beat the whites to stiff peaks, and reserve the yolks.
  2. In a large bowl, cream sugar and butter. Beat in egg yolks. Stir in milk and vanilla. Add flour, about 100g at a time. Fold in stiffly beaten egg whites. Pour cake mixture into a well greased 25cm tube cake tin, or a 25cm Bundt tin.
  3. Bake for 90 minutes at 170 C / Gas 3.


You can reduce the amount of sugar by up to half if you prefer a less sweet cake.
Bake the cake in two large loaf tins instead of one tube or Bundt tin; simply adjust cooking time as needed.

The recipe turned out great for me, a first time baker @38yrs.old,but i think it called for too many eggs. The first one I baked was good, but the second one could have won a prize. I used 6 eggs instead and used margarine instead of butter.-13 Aug 2007


The batter was SOOO buttery. I knew this cake would be like heaven. I followed the recipe to the letter(except the bake time. It was done in about half the time). However, when I ate it after baking, it tasted more like cooked eggs. I really did not taste any butter. I think it was a waste of my egg and butter supply. How to make it

  • Combine all ingredients in a large mixer bowl until smooth about 5 or 6 minutes. Add eggs , one at a time while you mix.
  • Pour into well buttered Bundt pan. (You can use bread loaf pan, but gram used this)

Easy Pound Cake Recipe

2¾ cups sugar
1¼ cups butter or margarine, softened
1 tsp. vanilla
5 eggs
3 cups all purpose flour
1 tsp. baking powder
¼ tsp. salt
1 cup milk

Preheat oven to 350°. In a large bowl, combine sugar, butter, vanilla and eggs. Beat on low until mixed, about 1 minute, scraping bowl constantly.

Beat on high speed for 5 minutes, occasionally scraping the bowl.

Mix flour, baking powder and salt. Beat in alternately with milk on low speed. Spread in a well-greased 10ࡪ tube pan.

Bake 70 to 80 minutes or until a toothpick inserted in the center comes out clean. Cool 20 minutes in the pan. Then remove onto a wire rack and cool completely. Serves 8-10.
