  1. Separate the eggs. Beat the whites to stiff peaks, and reserve the yolks.
  2. In a large bowl, cream sugar and butter. Beat in egg yolks. Stir in milk and vanilla. Add flour, about 100g at a time. Fold in stiffly beaten egg whites. Pour cake mixture into a well greased 25cm tube cake tin, or a 25cm Bundt tin.
  3. Bake for 90 minutes at 170 C / Gas 3.

Tips

You can reduce the amount of sugar by up to half if you prefer a less sweet cake.
Bake the cake in two large loaf tins instead of one tube or Bundt tin; simply adjust cooking time as needed.

The recipe turned out great for me, a first time baker @38yrs.old,but i think it called for too many eggs. The first one I baked was good, but the second one could have won a prize. I used 6 eggs instead and used margarine instead of butter.-13 Aug 2007

The batter was SOOO buttery. I knew this cake would be like heaven. I followed the recipe to the letter(except the bake time. It was done in about half the time). However, when I ate it after baking, it tasted more like cooked eggs. I really did not taste any butter. I think it was a waste of my egg and butter supply. Sorry, but I would not make this again.-21 Mar 2004

This Pound Cake Trifle Is An Easy and Impressive Dessert!

If you’re looking for a centerpiece of a dessert, I have the one for you. This Pound Cake Trifle is one of the easiest and prettiest desserts out there. It literally takes minutes to put together and is a great way to use up pound cake, or take a shortcut and buy a store bought cake! I used my Sour Cream Pound Cake Recipe in the photographed trifle, and it’s absolutely delicious!

The recipe I’m sharing today is layers of Sour Cream Pound Cake, lemon cheesecake mousse, lemon curd soaked berries, and whipped topping. Basically Spring in a trifle dish!

You can get creative with your layers, adding fruits you prefer, or flavored custards or fillings. This is a recipe that can be made 100% homemade, or made with store-bought ingredients…OR a combination of the two!

Tip From Shelly…

Don’t get too hung up on creating perfect layers, or making sure everything is even. The beauty of a trifle is how imperfect it appears. You can make it with 3 layers or 6 layers…it’s completely up to you!

Classic Two Egg Vanilla Pound Cake

This easy pound cake is baked in a loaf pan, so it's relatively small and just the right size for many families. You might even call it a half-pound cake!

Pound cake is a wonderful blank canvas. Serve slices of this delicious vanilla pound cake with berries or a fruit sauce or top it with lemon sauce or fruity lemon curd. Slices make excellent strawberry shortcake with sweetened berries and whipped cream. You can even use it to make dessert French toast!

A pound cake isn't difficult, but there are some rules. For a successful pound cake, have all ingredients at room temperature and read the instructions before you begin. It's important to cream the butter and sugar thoroughly until it's very light and fluffy. Give it a good 5 minutes beating time. And follow the instructions for alternating the dry ingredients and milk. And finally, don't overbeat the finished batter or you'll reduce that valuable air you added when you creamed the butter and sugar.

This key lime ( or regular lime!) cake is made with fresh fruit juice, and zest. It’s completely homemade, and perfect for any occasion!

I’ve been getting so many request for a homemade key lime pound cake! I think that the recipe request started pouring in since the beginning of summer 2016. Must admit, that I had to play around with a few recipes, before I could bring you the perfect key lime pound cake. Some of the recipe for this cake we’re kind of “blah”, some we’re good, but I was looking for spectacular. I think one of the best recipes that I tried ( before this one anyway) was southern livings key lime pound cake. Although I loved the recipe, I decided to switch out, and add some ingredients to make the perfect key lime cake recipe.

This cake is made from scratch. This is not a key lime bundt cake with lime jello. Yeah, it sounds good, but we’re going skip out on the gelatin. For now anyway….

How to Make a Healthier Pound Cake

According to culinary lore, pound cake got its name because the original recipe called for a pound each of butter, sugar, eggs and flour. But that doesn't mean every loaf has to pack on the pounds! Food Network Kitchens developed this healthier take by making a few simple switches to the classic. Here's how to help this beloved cake slim down.

1. Swap in a mix of heart-healthy olive oil and protein-rich Greek yogurt to take the place of the traditional butter.

2. Add a moderate amount of sugar: Just 3/4 cup will do the trick. (Many pound cake recipes call for 1, 2 or even 3 cups of sugar!)

3. Choose white whole wheat flour instead of the customary all-purpose flour. You'll get the health benefits that come with whole-grain flour but still yield a pound cake with great texture.

4. Swap in egg whites for some of the whole eggs to help scale back on calories and cholesterol. This recipe uses 2 egg whites and 1 whole egg. Some classic recipes call for as many as 9 whole eggs.
